Abstract

La venta de snacks ha aumentado mucho en los últimos años. Debido a los horarios laborales actuales que carecen de ser ajustados, los consumidores buscan alimentos rápidos. Pero estos alimentos por lo general tienen un problema, su elevado contenido calórico. Por eso, en el siguiente trabajo se presenta una alternativa a los snacks fritos, horneados o extrusionados. Se trata de unos snacks de boniato con un recubrimiento de carboximetilcelulosa, el cual podría actuar como barrera protectora frente a la absorción de grasa. Además, en este trabajo también se presenta la caracterización de la composición química, las propiedades fisicoquímicas, la actividad antioxidante, compuestos bioactivos y análisis sensorial.
