Abstract

En la sociedad actual, las hamburguesas son uno de los alimentos más consumidos a nivel mundial y las industrias, a su vez, son cada vez más conscientes de la demanda de alimentos saludables por parte de los consumidores, que comprenden cada vez más, la relación entre la alimentación y su influencia sobre la salud. Es por ello que, el objetivo de este trabajo fue la investigación del reemplazo parcial de grasa dorsal de cerdo (50 %) en hamburguesas de ternera por emulsión gelificada (EG1): aceite de soja y harina de maca o (EG2): aceite de soja, harina de maca y aceite esencial de chincho. Se analizó la composición proximal (proteína, grasa, cenizas y humedad), propiedades fisicoquímicas (pH, aw, color y textura) y de cocinado, parámetros de oxidación lipídica (TBA) y propiedades sensoriales. Los resultados mostraron efectos positivos de dureza, masticabilidad, (ΔE*<3) en muestras cocinadas y mayor aceptabilidad sensorial tras la utilización de emulsión gelificada a base de aceite de soja y harina de maca en la sustitución parcial de grasa de cerdo en hamburguesas de ternera.
