Abstract

La alergia a los alimentos es una patología donde más de tres millones y medio de los europeos que la padecen son menores de 25 años ocurriendo el aumento más abrupto de las alergias alimentarias en niños y gente joven. Además, el número de reacciones alérgicas graves (anafilaxia) también está aumentando. El desarrollo de los métodos diagnósticos ha permitido conocer mejor esta enfermedad y sus características. Por otra parte, el mayor conocimiento de la fisiopatología y la respuesta del sistema inmunitario ha favorecido la identificación de nuevos cuadros clínicos asociados a reacciones adversas a alimentos. Aunque el tratamiento completo de la alergia alimentaria es hoy día un misterio, la exclusión del alérgeno responsable es el único método efectivo conocido. La realidad es que las investigaciones más recientes han abierto el camino a la posibilidad de nuevas terapias, centradas en elevar desde la tolerancia hacia la cura completa de las distintas alergias y mejorando la calidad de vida de quien la padece.

Allergy to food is a classic pathology whose frequency is increasing. Three and a half million Europeans suffering from under-25s and the largest increase occurs in children and young people. In addition, the number of serious allergic reactions (anaphylaxis) is also increasing. The development of diagnostic methods, not always simple, has allowed us to better understand this disease and its characteristics. On the other hand, the greater knowledge of the physiopathology and the response of the immune system has favored the identification of new clinical pictures associated with adverse reactions to food, Although the complete treatment of food allergy is a mystery today, the exclusion of responsible allergen is the only known effective method. The reality is that the most recent research has opened the way to the possibility of new therapies, focused on elevating from tolerance towards the complete quality of other allergies and improving the quality of lite of those who suffer from it.
