La producción española representa más del 50% de la producción mundial. Andalucía es el principal centro de producción y más concretamente Jaén, con su título de “Capital mundial del aceite de oliva”. En cuanto a comercialización, España es el mayor exportador de aceite de oliva en el mundo y su consumo interior per cápita es de 9.6 l/año. El mercado se caracteriza por tener una oferta muy dispersa y una demanda muy concentrada. El país cuenta con 818 almazaras (productores) mientras que la comercialización recae mayoritariamente en unas pocas empresas. En este sector el precio depende de la oferta y la demanda, y generalmente sufre importantes oscilaciones de un año a otro debido a que el olivo es un árbol vecero.
