El mercado del aceite de oliva

Abstract

[ES] El mercado oleícola español es un importante motor económico para el país. Se trata de un sector en el cual España es líder mundial tanto en producción como en comercialización. La producción española representa más del 50% de la producción mundial. Andalucía es el principal centro de producción y más concretamente Jaén, con su título de “Capital mundial del aceite de oliva”. En cuanto a comercialización, España es el mayor exportador de aceite de oliva en el mundo y su consumo interior per cápita es de 9.6 l/año. El mercado se caracteriza por tener una oferta muy dispersa y una demanda muy concentrada. El país cuenta con 818 almazaras (productores) mientras que la comercialización recae mayoritariamente en unas pocas empresas. En este sector el precio depende de la oferta y la demanda, y generalmente sufre importantes oscilaciones de un año a otro debido a que el olivo es un árbol vecero.

[EN] Spanish olive oil market is an important economic engine for the country. This is a sector in which Spain is a world leader in both production and marketing. The Spanish production represents more than 50% of world production. Andalusia is the biggest producer and more specifically Jaén, with the title of "World Capital of Olive Oil". In marketing terms, Spain is the greatest exporter of olive oil in the world. The consumption of olive oil in Spain is 9.6litre/year. The market is characterized for a much dispersed supply and a very concentrated demand. The country has 818 oil mills (producers) while distribution companies are few. In this sector the price depends on supply and demand, and usually undergoes significant fluctuations from year to year because the olive tree is a tree “vecero”.
