Abstract

In this Master's Thesis research, there appears the influence of the system of culture, conventional and ecologically, on the quality and composition of the Extra Virgin Olive Oil. For it, we select different samples, these samples proceed from plots of conventional olive of the variety 'Picual' (experimental plots of the IFAPA) and ecologically (samples commercial and samples proceeding from the experimental plots of the IFAPA). The samples of Virgin Olive Oil are of early compilation to avoid the effect of ripenessand climatological conditions and of production, on the parameters to analyzing. In the samples, we analyze his regulation quaility (acid value, peroxide value and K232 and K270), nutritional and therapeutic quality (pigments carotenoid and chlorophyll, tocopherol, triterpenicacids and alcohols, and phenolic composition) and quality in food safety (pesticides). We think that the system of culture concerns negatively neither the quality nor to the nutritional and therapeutic composition of the Virgin Olive Oil.

En el presente Trabajo Fin de Máster, se plante la influencia del sistema de cultivo, convencional y ecológico, sobre la calidad y composición del Aceite de Oliva Virgen Extra. Para ello, se seleccionaron diferentes muestras procedentes de parcelas de olivar tradicional adulto de la variedad 'Picual' bajo sistema convencional (finca experimental IFAPA Centro Venta del Llano) y ecológico (muestras comerciales y procedentes de la finca experimental del IFAPA Centro Venta del Llano). Se determinó la calidad reglamentada de las muestras (índice de acidez, índice de peróxidos y coeficientes ultravioleta K232 y K270), calidad nutricional y terapéutica (pigmentos carotenoides y clorofílicos, tocoferoles, ácidos y alcoholes triterpénicos, y composición fenólica) y calidad en seguridad alimentaria (plaguicidas). A partir de los datos obtenidos, se considera que el sistema de cultivo no afecta negativamente ni a la calidad ni a la composición nutricional y terapéutica del Aceite de Oliva Virgen.
