Abstract

La implementación de Sistemas de Autocontrol en las empresas alimentarias es el sistema de mayor reconocimiento internacional para garantizar la seguridad de los alimentos. Es el método esencial reconocido por las normas internacionales (Codex Alimentarius) y nacionales (Real Decreto 2207/95), cuya aplicación garantiza la seguridad e inocuidad de los alimentos en cada etapa de la cadena alimentaria. En este Trabajo Fin de Máster, titulado, “Sistemas de Autocontrol y Trazabilidad para la elaboración de aceite de oliva virgen extra”, se ha abordado el estudio de la implantación de los Sistemas de Autocontrol en el sector oleícola, en particular en una almazara, mediante procedimientos de autocontrol puestos a punto por los propios operarios, lo que constituye una garantía de este principio y que además son imprescindibles para asegurar la trazabilidad del producto, fundamental para el nivel de protección de la salud de los ciudadanos, mejorando las garantías sanitarias de los alimentos que consumimos.

The implementation of self-monitoring systems in the food business is the greatest international recognition system to ensure food safety. It is the essential method recognized by international (Codex Alimentarius) and national standards (Royal Decree 2207/95), whose implementation ensures security and food safety at every stage of the food chain. This Master's Thesis, entitled, "Systems Self-control and traceability in the extraction of extra virgin olive oil" has approached the study of the implementation of self-monitoring systems in the olive sector, particularly in a oil mill, through self-control procedures put in place by the operators themselves, which is a guarantee of this principle and is also essential to ensure product traceability, and the level of protection of the health of citizens, improving the sanitary guarantees of the food we eat.
