Abstract

Las bacterias ácido lácticas (BAL) están ampliamente distribuidos en la naturaleza, estas se han aislado tanto del tracto digestivo de humanos y animales como de algunos alimentos, siendo la leche su medio más típico. Estas bacterias han sido utilizadas históricamente para preservar los alimentos ya que gracias a la fermentación de azúcares se obtienen algunas sustancias como ácido láctico o bacteriocinas que ayudan a competir contra microorganismos patógenos por lo tanto son muy utilizadas en la industria alimentaria y farmacéutica. En este ensayo hemos intentado aislar bacterias ácido lácticas de encurtidos y observar la producción o no de bacteriocinas ya que estos péptidos tienen actividad antimicrobiana frente a microorganismos patógenos protegiendo nuestra salud y pueden actuar como probióticos.

Lactics acid bacterias (LAB) are so extended in nature, they have been found in the human and animals digestive tract, and also in some food, being milk the most typical. These bacterias have been used historically to preserve food because in the fermentation of sugars is obtained some substances as Iactic acid or bacteriocins that help to fight against pathogenic microorganisms, so they are use so much in food industry and pharmaceutical industry.ln these experiment we have tried to isolate lactics acid bacterias on pickled, to see the production or not of bacteriocins, as these peptides have antimicrobian activity against phatogenic microorganisms protecting our health and they can perform as probiotics.
