Abstract

El selenio es un nutriente necesario para el ser humano que forma parte del metabolismo a través de los denominadas selenoproteínas. Se ha demostrado que estas moléculas participan en importantes funciones biológicas, pero también que un exceso de selenio resulta tóxico para el organismo (selenosis). Debido a que el principal aporte de selenio se produce a través de la dieta, se han hecho diversos estudios sobre la concentración de especies de selenio en alimentos y sobre la cantidad ingerida de los mismos. Se sabe que la acumulación de selenoproteínas en los alimentos de origen vegetal depende de la concentración de selenio en el suelo y de la forma en la que se encuentre. Por lo tanto, es importante el desarrollo de procedimientos analíticos que permitan la determinación y cuantificación de estas especies en los alimentos, siendo una de las técnicas más adecuada la espectrometría de masas molecular. Este trabajo se centra en la revisión del empleo de espectrometría de masas molecular para el análisis de especies de selenio en diversos alimentos de origen vegetal, como las levaduras, ajos, cebollas y nueces de Brasil. Los estudios revelan la presencia de diferentes especies de selenio en estos alimentos, pero las más comunes fueron la selenocisteína y selenometionina.

Selenium is a necessary nutrient for humans taking part in the metabolism through the so-called selenoproteins. It has been shown that these molecules participate in important biological functions, but also that an excess of selenium is toxic to the body (selenosis). Due to the fact that the diet is the main contributor of selenium, several studies have been carried out on the concentration of selenium species in food and on the amount of food ingested. It is known that the accumulation of selenoproteins in foods of plant origin depends on both the concentration and the type of chemical species of selenium in the soil. Therefore, it is important to develop analytical procedures that allow the determination and quantification of these species in food, being molecular mass spectrometry one of the most appropriate techniques. This work focuses on the review of the use of molecular mass spectrometry for the analysis of selenium species in different foods of plant origin, such as yeasts, garlic, onions, and Brazil nuts. Studies reveal the presence of different selenium species in these foods, but the most common were selenocysteine and selenomethionine.
