Abstract

La presencia de perclorato en los alimentos, generalmente de origen vegetal, ha originado en los últimos años una serie de alarmas relacionadas con los efectos nocivos en la salud a consecuencia del consumo de dichos alimentos contaminados. Esto ha propiciado que la Unión Europea establezca una nueva normativa para evitar que estos problemas continúen. Durante los últimos años se han descrito diversos métodos para la determinación de perclorato y otros contaminantes polares en diferentes muestras de alimentos. La necesidad de nuevas estrategias ha hecho que métodos de preparación de muestra genéricos como QuEChERS y QuPPe-PO hayan sido optimizados, siendo tanto la cromatografía líquida como la cromatografía iónica -ambas combinadas con espectrometría de masas en tándem (LC-MS/MS y IC-MS/MS) los métodos de determinación y cuantificación de percloratos más consolidados y efectivos. Este trabajo se centrará en el estudio detallado de estas técnicas, además de proporcionar información acerca de la presencia de este contaminante y la normativa aplicada al respecto.

The presence of perchlorate in food, typically from vegetal nature, has raised a series of concerns about the potential harmful effects of perchlorate-contaminated foods on the human health. The European Union has established new regulations to prevent future health issues associated with this contaminant. Research efforts have been devoted to establishing novel approaches for the determination of perchlorate and related polar contaminants in the last decade. Amongst them, both QuEChERS and QuPPe-PO are probably the more suited sample treatment approaches, combined with either liquid chromatography/tandem mass spectrometry (LC-MS/MS) or ion chromatography/tandem mass spectrometry (IC-MS/MS). The present work has focused on the detailed bibliographic review on the mentioned techniques, the impact and the current implemented regulations to tackle this contaminant.
