Abstract

El consumo de sustancias antioxidantes, entre las que destacan los compuestos fenólicos, se ha incrementado usándose en la mayor parte del mundo como alternativa para combatir ciertas enfermedades. En el presente Trabajo Fin de Grado se ha llevado a cabo una revisión bibliográfica acerca de las propiedades antioxidantes de extractos y aceite esencial de Mentha pulegium. Se ha revisado las distintas metodologías empleadas para la determinación del contenido fenólico total y examinado los distintos ensayos de evaluación de la actividad antioxidante. También se ha estudiado con detenimiento los distintos factores que afectan a la actividad antioxidante, tales como la parte de la planta, condiciones ambientales como el clima y la altitud, etapa fenológica, operaciones de pretratamiento y extracción y disolvente seleccionados. Tras analizar dicha revisión bibliográfica, se concluye que Mentha pulegium es una especie vegetal rica en sustancias antioxidantes, y, por lo tanto, beneficiosa para la salud.

The consumption of antioxidant substances, among which phenolic compounds stand out, has increased and is used in most of the world as an alternative to combat certain diseases. In the present Final Degree Project a bibliographic review has been carried out on the antioxidant properties of extracts and essential oil of Mentha pulegium. The different methodologies used to determine the total phenolic content have been reviewed and the different tests for the evaluation of antioxidant activity have been examined. The different factors that affect antioxidant activity have also been carefully studied, such as the part of the plant, environmental conditions such as climate and altitude, phenological stage, pretreatment and conditions, and selected solvent. After analyzing this bibliographic review, it is concluded that Mentha pulegium is a plant species rich in antioxidant substances, and, therefore, beneficial for health.
