El selenio (Se) es un oligoelemento indispensable para el cuerpo humano, ya que es primordial para la realización de diversas funciones vitales, tales como la reproducción, la producción de ADN o la protección del cuerpo frente a infecciones causadas por radicales libres. Debido a la importancia del estudio del Se presente tanto en el cuerpo humano como en sus posibles fuentes, es imprescindible estudiar las formas químicas en las que se encuentra en las diferentes fuentes naturales (alimentos) y conocer los procedimientos analíticos que permitan su determinación y cuantificación. En este trabajo se hace una revisión de los métodos analíticos tanto para la determinación de selenio total como para la identificación y cuantificación de las especies que presentan propiedades beneficiosas para la salud.
Selenium (Se) is an essential trace element for the human body, as it is indispensable for various vital functions such as reproduction, DNA production and protecting the body against infections caused by free radicals. The element concentration in the human body, as well as in the natural sources, and its speciation are key factors to understand the importance of Selenium. The knowledge on the different species and concentration values of selenium in natural sources such as food are of the utmost importance. In this work, the methods for the determination of selenium and the speciation of the different Se-compounds are studied.
