Aceite de oliva y salud

Abstract

Olive oil is a vegetable oil extracted from the olive fruit, the olive. Although it can be classified into different types according to their quality, the best example is the so-called extra virgin olive oil that brings significant benefits for the maintenance of human health, disease prevention, and even for better evolution when it appears. ln this review we have focused on the study of the beneficial effects of olive oil on cardiovascular health, cancer and the aging process; such benefits have been mainly attributed to its composition in monounsaturated fatty acids. Moreover in virgin and extra virgin olive oil have been found and quantified biophenols with important properties and roles in the control of atherogenesis, cancer prevention and improving the aging process.
