Abstract

En este Trabajo Fin de Grado se han estudiado los distintos métodos analíticos para la determinación de glicidol y cloropropanodioles en aceites vegetales y preparados infantiles. Tanto el glicidol como los cloropropanodioles son un nuevo grupo de compuestos químicos. Ambos se forman durante el procesado de muchos alimentos. Entre ellos son de especial interés el 3-monocloropropano-1,2-diol (3-MCPD), que es el más abundante en los alimentos y su isómero 2-monocloropropano-1,3diol (2-MCPD) que se encuentra a concentraciones más bajas. Debido a la toxicidad y a la amplia presencia de MCPD y glicidol unidos a ácidos grasos en diversos productos alimenticios, la protección de la salud de los consumidores exige la mitigación y la vigilancia de su contenido. En especial, preocupa la detección de estos contaminantes en los preparados infantiles ya que estos son los que dan alimento a muchos bebés durante sus primeros meses de vida. Las diferentes estrategias desarrolladas hasta la fecha para el análisis de estos componentes, los factores críticos que afectan a la determinación y las ventajas e inconvenientes de los diferentes métodos desarrollados han sido revisados.

In this end of degree work, the different analytical methods for the determination of glycidol and chloropropanediols in vegetables oils and infants preparations have been studied. These analytes are a new group of chemical compounds. Both are formed during food processing. Among them, it is of special interest the 3-monochloropropane-1,2-diol (3-MCPD) which is the most abundant in the aliments, and its 2-monochloropropane-1,2-diol (2-MCPD) isomer. The 2-MCPD is found at low concentrations. Due to the toxicity and the wide presence of MCPD and glycidol in various food products, the protecting consumer health requires mitigation and the monitoring its content. In special, the scientists are concerned about the detection of these contaminants in infant formula because these are the ones that feed many babies during the first month of their lives. The different strategies developed to date for the analysis of these components, the critical factors that affect rge determination, and the advantages and disadvantages of the different methods developed have been reviewed.
