[ES] El sector oleícola español es la primera potencia mundial en producción de aceite de oliva y, en concreto, en la zona Sur del territorio nacional supone un gran impulso para el empleo en las épocas de recolección. En este trabajo se analizan tanto la evolución de este sector y su mercado interior y exterior como su importancia en la Unión Europea y la regulación a través de la Política Agraria Común (PAC). La superación de las dificultades a las que estas empresas se enfrentan dependerá del cambio en la mentalidad de los productores y el apoyo institucional que tengan pero, sobre todo, de la capacidad para adaptar un producto tradicional a unos mercados en constante cambio.
[EN] The Spanish olive sector is the leading world power in the production of olive oil and, specifically, in the southern part of the national territory it is a great boost for employment in the harvesting season. This paper analyzes both the evolution of this sector and its internal and external market and its importance in the European Union and the regulation through the Common Agricultural Policy (CAP). Overcoming the difficulties that these companies face will depend on the change in the mentality of the producers and the institutional support they have but, above all, on the ability to adapt a traditional product to markets in constant change.
