Abstract

El objetivo de este trabajo fue evaluar los efectos provocados por la exposición gradual de bacterias procedentes de alimentos ecológicos a concentraciones subletales de distintos biocidas. El estudio incluye los efectos inducidos sobre la tolerancia al propio biocida, a otros biocidas, así como el desarrollo de resistencias cruzadas con antibióticos. También se ha analizado la implicación de los mecanismos de exporte y las modificaciones en la fluidez de la membrana citoplasmática como posibles responsables de dichas resistencias, así como la influencia de la tolerancia a los biocidas sobre la capacidad de crecimiento y la resistencia a otros tipos de estrés. La exposición de cepas sensibles a concentraciones subletales de biocidas provocó una disminución transitoria en la susceptibilidad a antibióticos y otros biocidas. Las cepas adaptadas también mostraron alteraciones en las características fisiológicas analizadas, aunque la resistencia frente a sales biliares no se modificó tras la adaptación.

The aim of the present study was to analyze the effects of step-wise exposure of biocide-sensitive bacteria from organic foods to biocides. The analysis included changes in the tolerance to the biocide itself, the tolerance to other biocides, and cross-resistance to clinically important antibiotics. The involvement of efflux mechanisms was also studied as well as the possible implication of alterations on cytoplasmic membrane fluidity in the resistance mechanisms. The influence of biocide tolerance on growth capacity of the adapted strains and on subsequent resistance to other physical stresses, as heat tolerance and gastric acid or bile resistance has also been analyzed. Gradual exposure of sensitive strains to biocides resulted in mainly transient decreased antimicrobial susceptibility to other antibiotics and to biocides. Biocide-adapted bacteria also exhibit alterations in physiological characteristics, while bile resistance does not seem to be influenced by biocide adaptation.
