Abstract

[EN] The present doctoral thesis presents a historical overview of the technology used in the manufacture of sugar cane, exposing a study from the industrial archeology of the relevant historical industrial heritage present in the old cane sugar factories, based on a study from the industrial engineering (mechanical engineering and industrial organization) and from engineering graphics. In particular, we have analyzed and compared from both points of view the two steam engines more widespread in the tropical Andalusian coast, particularly in the Costa Tropical, as the French company Fives-Lille and also the Scottish Mirrlees-Watson company, that they are in plants Nuestra Señora del Pilar in Motril and the factory of Nuestra Señora del Rosario in Salobreña, respectively.

[Es] Se presenta un recorrido histórico sobre la tecnología empleada en la fabricación del azúcar de caña, presentando un estudio desde la arqueología industrial del patrimonio histórico industrial más relevante existente en las antiguas fábricas, fundamentado en un estudio desde la ingeniería industrial (ingeniería mecánica y organización industrial) y desde la ingeniería gráfica. En particular, se han analizado y comparado desde ambos puntos de vista las dos máquinas de vapor más extendidas en la costra tropical andaluza, concretamente en la costa granadina, de las compañías francesa Fives-Lille y escocesa Mirrlees-Watson, presentes en las fábricas de Ntra. Sra. del Pilar en Motril y en la fábrica de Ntra. Sra. del Rosario en Salobreña, respectivamente.
