Abstract

Las dietas altas en grasas se asocian con un elevado riesgo de desórdenes metabólicos, lo que provoca trastornos como el sobrepeso, la resistencia a la insulina, la hipertensión, la esteatosis hepática y la disfunción reproductiva entre otros. Este trabajo plantea que la ingesta de una dieta enriquecida con aceite de oliva virgen extra (EVOO) podría actuar como factor protector frente a las alteraciones metabólicas y reproductoras, a diferencia de una dieta enriquecida en mantequilla y colesterol, cuya ingesta propiciaría la aparición de dichas alteraciones endocrinas primarias (hígado y testículo), secundarias (hipófisis) o terciarias (hipotálamo). Se propone que distintos componentes del EVOO modularían sistemas enzimáticos, entre ellos el Sistema Renina-Angiotensina, enzimas implicados en la regulación del estrés oxidativo, el control de la ingesta de alimento y la glucemia. El conjunto de los resultados mediados por modificaciones en las actividades peptidasas apunta un efecto protector del aceite de oliva virgen en comparación con fuentes lipídicas ricas en ácidos grasos saturados y colesterol.High fat diets are associated with a high risk of metabolic disorders, causing disorders such as overweight, insulin resistance, hypertension, liver steatosis, and reproductive dysfunction, among others. This work proposes that the intake of a diet enriched with extra virgin olive oil (EVOO) could act as a protective factor against metabolic and reproductive disorders, unlike a diet enriched in butter and cholesterol, whose intake would favor the appearance of such primary (liver and testis), secondary (pituitary) or tertiary (hypothalamus) endocrine disorders. It is proposed that different components of the EVOO would modulate enzyme systems, among them the Renin-Angiotensin System, enzymes involved in the regulation of oxidative stress, the control of food intake and blood glucose. The set of results mediated by modifications in peptidase activities indicates a protective effect of virgin olive oil compared to lipid sources rich in saturated fatty acids and cholesterol.
