En este trabajo se realizó un estudio comparativo sobre riesgos potenciales en una colección de 50 enterococos aislados de heces de ratones alimentados con una dieta estándar o enriquecida en diferentes grasas: aceite de oliva virgen extra, aceite de oliva refinado o mantequilla, a diferentes tiempos. Las cepas fueron evaluadas bioquímicamente y caracterizadas genéticamente. El estudio bioquímico reveló que existían diferencias estadísticamente significativas entre las diferentes dietas y tiempos en muchos de los ensayos. La especie más representativa era E. faecalis y el estudio genético para su caracterización taxonómica reveló la presencia fundamentalmente de dos secuencias tipo MLST, la ST9 en los aislados de la dieta estándar y la ST40 en los aislados de la dieta enriquecida con mantequilla. Concluimos con un estudio de proteómica donde observamos las diferencias en las fracciones proteicas de los dos ST y su posible relación con la diferente capacidad invasiva.
In this work, a comparative study on potential risks was carried out in a collection of 50 enterococci isolated from faeces of mice fed a standard diet or enriched in different fats: extra virgin olive oil, refined olive oil or butter, at different time points. The strains were evaluated biochemically and genetically characterized. The biochemical study revealed that there are statistically significant differences between the different diets and times in each of the assays. The most representative species was E. faecalis and the genetic study for its taxonomic characterization revealed the presence of essentially two sequence types MLST, ST9 in the standard diet isolates and ST40 in the butter-enriched diet. We conclude with a proteomic study where we observe the differences in the protein fractions of the two STs and its possible relationship with their different invasive ability.
