Abstract

Este trabajo plantea como objetivo principal la realización de un diagnóstico estratégico de una empresa tradicional cántabra del sector de la pastelería y la bollería que, pese a la mejora en las perspectivas generales del conjunto del sector a nivel nacional (volumen de fabricación, volumen de facturación, etc.) estaba sufriendo un ligero estancamiento de su modelo de negocio. Para su desarrollo se ha llevado a cabo, en primer lugar, un diagnóstico de la evolución del sector a nivel regional en la última década a partir de la información proporcionada por SABI (Sistema de Análisis de Balances Ibéricos). Posteriormente se ha proporcionado una revisión de las diversas herramientas existentes para el análisis de modelos de negocio a fin de identificar aquella herramienta que mejor encaja con las características de la empresa analizada en el caso de estudio. En último lugar se ha procedido a realizar una reflexión crítica del modelo de negocio actual de la empresa analizada, mediante el uso de “El Lienzo Canvas” planteándose como ejes centrales de actuación la renovación de la imagen corporativa, una política activa de marketing en redes sociales, así como la ampliación de su mercado objetivo y un cambio conceptual en la forma de ofrecer el servicio. En síntesis, con las medidas propuestas se pretende que la empresa se adapte a las nuevas tendencias y exigencias del mercado al tiempo que incrementa su competitividad y gana cuota de mercado en su sector.

The main objective of this dissertation is to carry out a strategic diagnosis of a traditional company in the pastry and bakery sector, which despite the improvement in the general outlook for the sector as a whole at national level (manufacturing volume, turnover, etc.) was suffering a slight standstill of its business model. For its development has been carried out, first, a diagnosis of the evolution of the sector at regional level in the last decade from the information provided by SABI (Sistema de Análisis de Balances Ibéricos). Then, a review of the various existing tools for the analysis of business models has been provided in order to identify the one that best matches the characteristics of the company analyzed in the case study. Finally, a critical reflection of the current business model of the selected company has been carried out, using "The Canvas" model, considering as central axes of action the renewal of the corporate image, an active policy of marketing in social media, as well as the expansion of its target market and a conceptual change in the way of offering the service. In short, the proposed measures are intended to adapt the company to new trends and market demands while increasing its competitiveness and gaining market share in its sector.
