Abstract

Tras el crecimiento global de la industria y las nuevas tendencias de consumo, las personas optan por adquirir productos saludables, orgánicos y diferenciadores apalancando directamente el crecimiento de las pequeñas empresas que anhelan posicionarse en el mercado con productos de calidad. Estas nuevas tendencias tienen que ver con el aumento en el consumo del chocolate gourmet, saludable y de origen; este concepto de chocolates saludables se ha vuelto algo único para cada país, en especial para Colombia donde en los últimos años el concepto del cacao ha tomado un giro de lo industrial a lo auténtico e innovador. El presente trabajo está orientado en realizar el estudio de investigación para la prefactibilidad de la creación de una empresa de chocolatería artesanal, con materia prima directamente de las asociaciones de productores Aprocalg (Asociación de Productores de Cacao de Algeciras) y Asopeca (Asociación de Pequeños Productores de Cacao de Campoalegre) de los municipios de Algeciras y Campoalegre – Huila, mediante un modelo de sostenibilidad e inclusión social, en la ciudad de Bogotá. El proyecto se realizó teniendo en cuenta diferentes etapas como la elaboración del marco de análisis del usuario y entendimiento de la problemática; el análisis del entorno y oportunidades de negocio; el diseño y validación del modelo de negocio y el análisis estratégico – validación técnica y financiera. Considerando las condiciones actuales del mercado y en específico las del sector del cacao, Cacao Artesanal del Huila tendrá un impacto social positivo mediante el enfoque de valor compartido donde los protagonistas son los productores, realizando retribución económica, social y demás beneficios directamente a las asociaciones de productores de la región vinculada con la empresa.

Following the global growth of the industry and new consumer trends, people are choosing to buy healthy, organic and differentiating products, directly leveraging the growth of small companies that yearn to position themselves in the market with quality products. These new trends have to do with the increase in the consumption of gourmet, healthy and origin cocoa; this concept of healthy cocoa has become unique for each country, especially for Colombia where in recent years the concept of cocoa has taken a turn from the industrial to the authentic and innovative. This work is aimed at conducting a research study for the pre-feasibility of creating an artisan cocoa company, with raw material directly from the producer associations Aprocalg (Asociación de Productores de Cacao de Algeciras) and Asopeca (Asociación de Pequeños Productores de Cacao de Campoalegre) of the municipalities of Algeciras and Campoalegre - Huila, through a model of sustainability and social inclusion, in the city of Bogota. The project was carried out considering different stages such as the elaboration of the user analysis framework and understanding of the problem; the analysis of the environment and business opportunities; the design and validation of the business model and the strategic analysis - technical and financial validation. Considering the current market conditions and specifically those of the cocoa sector, Cacao Artesanal del Huila will have a positive social impact through the shared value approach where the protagonists are the producers, making economic, social and other benefits directly to producer associations in the region linked to the company.
