Abstract

Aún hay un gran desconocimiento de las bondades, propiedades y usos de los hongos que existen en el planeta, y por supuesto también en Colombia; si bien, se han adelantado diferentes estudios e investigaciones de las diferentes setas, aún falta mucha atención y dedicación para descubrir más de este maravilloso reino fungi. A nivel gastronómico, la concentración del consumo de hongos está muy enfocado en los champiñones, portobellos y shiitakes; sin embargo, existen 184 especies comestibles identificadas en Colombia, pero lamentablemente aún falta mayor sensibilización y conocimiento a las personas para que puedan explorarlas e integrarlas en sus diferentes preparaciones de sus platos. Es a partir de esta premisa que da origen a este proyecto para la creación de un centro experiencial de setas comestibles no tradicionales, bajo principios de comercio justo y valor compartido en el cultivo en zonas rurales de la sabana de Bogotá y Cundinamarca. Resultado de una investigación de mercado, que daría una vitrina de exposición de las diferentes especies que producen los cultivadores de la zona para la fácil adquisición y consumo del consumidor. En este documento se consolida el proceso de definición del proyecto, antecedentes, objetivos, marco teórico, resultados de las validaciones y simulación financiera, que permite evidenciar la fortaleza y atractividad de este modelo de negocio como un proyecto sostenible (ambiental, social y económicamente), con un mercado objetivo, pero con posibilidad de crecimiento exponencial, que permitirá cada vez más el posicionamiento de la empresa.

There is still a huge lack of knowledge about the benefits, properties, and uses of mushrooms that exist on the planet, and of course also in Colombia; although different studies and research on the different mushrooms have been carried out, there is still a lack of attention and dedication to discovering more of this wonderful fungi kingdom. At a gastronomic level, the concentration of mushroom consumption is very focused on mushrooms, portobellos, and shiitakes; however, there are 184 edible species identified in Colombia, but unfortunately, there is still a lack of awareness and knowledge for people to explore them and integrate them in the different preparations of their dishes. It is this premise that gives rise to this project for the creation of an experiential center of non-traditional edible mushrooms, under principles of fair trade and shared value in the cultivation in rural areas of the savannah of Bogota and Cundinamarca. The result of market research would provide a showcase for the different species produced by growers in the area for easy acquisition and consumption by the consumer. This document consolidates the process of defining the project, background, objectives, theoretical framework, results of the validations, and financial simulation, which allows evidencing the strength and attractiveness of this business model as a sustainable project (environmentally, socially, and economically), with a target market, but with the possibility of exponential growth, which will increasingly allow the positioning of the company.
