Morfometric and quality changes by application of three calcium sources under mild termal treatment in pre–cut fresh melon (Cucumis melo L.)

Abstract

Se evalúo el efecto de la aplicación de baños cálcicos sobre los parámetros morfométricos del tejido celular y los atributos de calidad de melón (Cucumis melo L) fresco precortado. Las muestras fueron tratadas con tres fuentes de calcio: cloruro, lactato y propionato a dos concentraciones: 0.5 y 1% a 60°C por tres tiempos de aplicación frente a un testigo. La activación de la pectin metil esterasa en presencia de calcio permitió la estabilización de la firmeza del tejido. Los parámetros morfométricos, indicaron un efecto positivo para lactato y cloruro de calcio al mantener la integridad de la pared celular, mientras el propionato y el tratamiento sin calcio incrementaron el área celular en un 38% y 51% respectivamente, lo cual se refleja en una pérdida de firmeza del tejido. El propionato mantuvo los atributos sensoriales propios del melón, mismos que se intensifican por el tratamiento con lactato. La aplicación de baños cálcicos empleando sales como el cloruro y el lactato dentro de un esquema de mínimo procesamiento, permitió conservar las características del tejido del melón fresco precortado, sugiriendo que este tratamiento contribuiría a mantener su estabilidad durante el almacenamiento.

The effect of calcium application was evaluated on cellular tissue over morphometric parameters and quality attributes of melon fresh–cut (Cucumis melo L.). Melon samples were treated with different sources of calcium chloride, lactate and propionate at two concentrations: 0.5 and 1% at 60°C for three times of application. The effect on tissue firmness is due to activation of pectin methylesterase and calcium presence, allowing the firmness stabilization. The moi–phometric parameters indicated a positive effect of lactate and calcium chloride to maintain integrity of rite cell wait. Treatments with propionate and without calcium creased cell area by 38% and 51% respectively, which is reflected in loss of tissue firmness. Propionate retained melon sensory attributes, and lactate showed intensification of them. The application of calcium as salts of chloride and lactate preserved characteristics of pre–cut fresh melon as mining processing treatment, which nray contribute to product stabilization during storage.
