Abstract

L’obiettivo di questa tesi è stato quello di approfondire la comprensione dell’impatto ambientale del settore lattiero-caseario italiano, con particolare attenzione all’impronta di carbonio (Carbon Footprint, CF) del latte bovino. Il lavoro offre una revisione completa della CF dei sistemi di produzione lattiera in Italia attraverso un’analisi sistematica degli studi di Life Cycle Assessment (LCA) e valuta in che modo l’integrazione dei dati individuali del Dairy Herd Improvement (DHI) con le informazioni specifiche sull’alimentazione aziendale possa migliorare l’accuratezza delle stime delle emissioni di metano enterico rispetto ai valori predefiniti dell’IPCC Tier 2. Sono stati esaminati gli studi LCA pubblicati negli ultimi tredici anni (2012 - 2025) relativi all’impronta di carbonio del settore bovino da latte in Italia, utilizzando inoltre i dati individuali dei controlli funzionali DHI provenienti da 138 aziende lattiero-casearie, integrati con le razioni alimentari specifiche di ciascuna azienda, per affinare le stime delle emissioni di metano enterico di tre razze bovine italiane: Frisona Italiana, Bruna e Pezzata Rossa. L’inclusione delle informazioni alimentari a livello aziendale ha permesso di ottenere stime più accurate e contestualizzate, meglio rappresentative della variabilità delle pratiche di alimentazione, e sono state osservate differenze tra razze in termini di ingestione alimentare, produzione di latte ed emissioni di metano enterico. Migliorando la risoluzione dei dati e integrandoli in modelli predittivi, questa tesi contribuisce a generare conoscenze più affidabili in grado di orientare allevatori, decisori politici e rappresentanti del settore verso pratiche che massimizzino l’efficienza produttiva riducendo al minimo gli impatti ambientali.

The aim of this thesis was to gain a deeper understanding of the environmental impact of the Italian dairy sector, with a particular focus on the carbon footprint (CF) of bovine milk. It provides a comprehensive review of the CF of Italian dairy production systems through a systematic analysis of life cycle assessment (LCA) studies and evaluates how integrating individual-level Dairy Herd Improvement (DHI) records with farm-specific feeding data can improve the accuracy of enteric methane emission estimates compared with IPCC Tier 2 default values. We reviewed LCA studies published over the past 13 years that assessed the carbon footprint of the dairy cattle sector in Italy and used individual-level inputs from DHI test-day records from 138 commercial dairy farms, combined with farm-specific ration data, to refine enteric methane emission estimates for three Italian dairy breeds: Holstein Friesian, Brown Swiss, and Simmental. Incorporating farm-level dietary information provided more accurate and context-specific estimates that better reflected the variability in feeding practices, and we observed breed differences in feed intake, milk production, and enteric methane emissions. By refining the resolution of data and embedding it into predictive models, this thesis contributes to generating more reliable insights that can guide farmers, policymakers, and industry stakeholders toward practices that maximize production efficiency while minimizing environmental impacts.
