Abstract

Le nostre scelte alimentari sono guidate da molteplici dimensioni psicologiche: cognitive, emotive, valoriali, sociali e comportamentali. La psicologia sociale dell’alimentazione aiuta a comprendere queste dimensioni e a capire come promuovere un’alimentazione sana e sostenibile, migliorando il benessere delle persone. Cosa conta di più nella nostra scelta di cosa mangiare? In che modo la comunicazione online e offline influenza il nostro stile alimentare? Essere a tavola con altri cambia il nostro comportamento? Cosa spinge le persone a diventare vegane? Grazie all’intelligenza artificiale è possibile sostenere le persone nel cambiamento delle abitudini alimentari? Il volume affronta tutti questi temi con riferimenti rigorosi e aggiornati alla letteratura scientifica, con un’apertura agli sviluppi più promettenti nell’ambito della disciplina. Arricchito da materiali digitali, questo manuale si rivolge in primo luogo agli studenti, ma anche a tutti coloro che per motivi personali e professionali sono interessati al mondo dell’alimentazione.
