Abstract

Se realizaron diferentes estudios sobre el consumo de fitato y su influencia en la densidad mineral ósea en mujeres postmenopausicas: En el primer estudio se valoró el consumo de fitato mediante un cuestionario por autodeclaración y se realizó una densitometría central y periférica a cada mujer. Se comprobó que las mujeres que referían niveles más elevados de consumo presentaban mejores niveles de densidad mineral ósea, tanto a nivel de calcáneo como de columna lumbar y cuello de femoral. En un segundo estudio se realizó una densitometría central de columna y cuello femoral y se determinó el consumo de fitato mediante la medición de la concentración de fitato en orina. Este estudio demostró que las mujeres que tenían concentraciones de fitato en orina elevadas, presentaban mejores niveles de densidad mineral ósea (tanto a nivel de columna como de cuello femoral) que aquéllas que tenían concentraciones de fitato en orina bajos. En el tercer estudio se evaluó el porcentaje de pérdida de masa ósea al año. Para ello se realizó una densitometría central de columna lumbar y cuello femoral y se determinó la concentración de fitato en orina al inicio y 12 meses después. Se comprobó que las mujeres con niveles altos de fitato en orina presentaban menor porcentaje de pérdida de densidad mineral ósea tanto a nivel de columna como de cuello femoral. En el último estudio se valoró, mediante la herramienta FRAX®, el riesgo de fractura y se comprobó que las mujeres con niveles altos de fitato en orina presentaban un menor riesgo de fractura.
