Abstract

El marinado tiene varios propósitos relacionados con la conservación de la textura y de los jugos o líquidos de la carne, la inhibición de la oxidación de la grasa e incrementar la duración segura de la carne de pollo, como se ofrece hoy, en escala industrial -- Este es un proceso sujeto a controversia -- Actualmente, el mercado viene presentando varias tendencias en los consumidores: unas orientadas al precio, otras a la compra al menudeo de partes de pollo en combinaciones y en presentación familiar, o al pollo entero, y a que sean marinados o no marinados -- Esta última opción, sea por elección del consumidor o por la presentación que ofrece el productor, tiene la implicación de dividir el abanico de oferta entre pollo marinado o pollo no marinado -- En mercadeo, este último es considerado como “puro pollo” -- Esta propuesta busca aglomerar los criterios claves que permitan decidir si ofrecer o no pollo marinado en el mercado nacional, por parte de una empresa que, mediante integración vertical, produce carne de pollo -- Los criterios que se definen para consultar son: estudio de mercadeo, estudio financiero, estudio legal, estudio ambiental, estudio organizacional y estudio del entorno -- El pollo marinado se utiliza para mejorar la suavidad y la jugosidad, y disminuye el desarrollo de la rancidez oxidativa de la carne fresca -- Se hace referencia a ellos como “tenderización” o “inyección” de la carne (Maddock, 2008)
