Abstract

El aguacate presenta una importancia creciente en el mercado internacional debido no sólo a las amplias posibilidades para el consumo fresco y procesado (guacamole, mitades o cubos congelados, sorbetes, helados y pulpas como base para productos untables entre otros) sino también a su carácter de materia prima para la extracción de aceite de amplia utilización en la industria cosmética y alimenticia, ya que es comparable en calidad con el aceite de oliva.
