Gastronomia vegetariana tradicional portuguesa

Abstract

Der Zweck dieses Projekts ist es, das vegetarische Potential der portugiesischen Küche zu offenbaren, und der portugiesischen Bevölkerung zu verstehen zu geben, dass eine vegetarische Mahlzeit genüsslich, emotional und durchaus traditionell sein kann. Der Vegetarismus ist weltweit ein wachsender Essenstrend, jedoch ist er in der portugiesischen Gastronomie wenig vorhanden. Obwohl es traditionelle vegetarische Rezepte gibt, können viele dieser nicht als komplette Gerichte bezeichnet werden, da sie nur als Beilage zu Fisch oder Fleisch angesehen werden. Das erste Ziel dieses Projekts ist, basierend auf der traditionellen gastronomischen und regional portugiesischen Sammlung, neue komplette vegetarische Gerichte zu kreieren, die ernährungsmäßig und organoleptisch vollkommen sind, so dass diese ein einzigartiges Erlebnis des sättigenden Vergnügens darstellen, und so von der portugiesischen Bevölkerung als Ernährungsalternative akzeptiert werden. Das zweite Ziel ist es, durch das Designen von Essen, zu einer Verbesserung der Gesundheitsstandards der Bevölkerung beizutragen. Das dritte Ziel ist politisch. Eine ethische Dimension der Nachhaltigkeit (sozial, kulturell und ökologisch) zu fördern, die neue ökonomische Möglichkeiten und vor allem, neue Konsumverhalten eröffnet.

Com este projeto pretende-se revelar o potencial da gastronomia portuguesa para o vegetarianismo e fazer perceber a população portuguesa que uma refeição vegetariana pode ser prazerosa, emocionante e tradicional. O vegetarianismo é uma tendência alimentar emergente no mundo sendo pouco explorada na gastronomia portuguesa. Apesar de haver receitas tradicionais vegetarianas, muitas destas não constituem pratos completos, sendo maioritariamente reconhecidas como acompanhamento a pratos de peixe ou carne. O primeiro objetivo deste projeto é, com base no acervo gastronómico tradicional e regional português, desenhar pratos vegetarianos completos, quer em termos nutricionais, quer organoléticos, para que constituindo uma experiência única de prazer saciante, passem a ser aceites pela população portuguesa como alternativa alimentar. O segundo objetivo é contribuir para melhores padrões sanitários de saúde pública da população através do desenho de comida. O terceiro objetivo é político, convocando uma dimensão ética da sustentabilidade (social, cultural e ambiental) que abrirá novas oportunidades económicas e sobretudo, novas atitudes ao consumo.

The purpose of this project is to reveal the vegetarian potential of the Portuguese gastronomy and make the Portuguese population understand that a vegetarian meal can be pleasurable, exciting and traditional. Vegetarianism is an emerging food trend in the world, although its unexplored in the Portuguese gastronomy. Despite the existence of traditional vegetarian recipes, a lot of these don’t consist in complete dishes, so that, most of them are just considered as sides for fish or meat. The first aim of this project is, based on the existing traditional gastronomic and regional Portuguese collection, create complete vegetarian dishes, in terms of nutrition and organoleptic, so that, through a unique experience of a satiating pleasure they become accepted by the Portuguese population as food alternative. The second aim is to contribute to the improvement of the sanitary patterns of the public health through the design of food. The third aim is politic, summoning an ethic dimension of sustainability (socially, culturally and environmentally) which will open up new economic opportunities, but overall, new attitudes of consumption.
