Abstract

Descripción: La cocina profesional se basa en el conocimiento y aplicación de técnicas internacionales, en ese sentido este curso te permitirá dominar las técnicas básicas de cocina, que se fundamentan en la manipulación del cuchillo, el dominio de las técnicas de corte y métodos de cocciones básicos, que se aplican respetando los principios de organización y las buenas prácticas de manipulación (BPM). Propósito: El curso es de carácter teórico - prácticos, dirigido a los estudiantes del segundo ciclo. Busca desarrollar las competencias específicas de Chef Ejecutivo y de Asesor Gastronómico. Para los alumnos de la carrera de Gastronomía y Gestión Culinaria, el curso, les permitirá dominar los fundamentos y las técnicas básicas que serán fundamentales para el dominio de técnicas avanzadas internacionales y tradicionales.
