Abstract

Descripción: Este curso aplica los principios y fundamentos, de las técnicas culinarias para la elaboración de platos clásicos de la gastronomía nacional, internacional y contemporánea, aplicando reglas de organización operativas y las normas sanitarias y de higiene que regulan el área de producción de un establecimiento de alimentos y bebidas. En ese sentido de manera práctica y vivencial aplicarás lo aprendido de la mano de un Chef instructor, quien acompañará tu aprendizaje de manera virtual. Propósito: El curso es de carácter teórico - práctico, dirigido a los estudiantes del segundo ciclo. Busca desarrollar la competencia general de pensamiento innovador y la competencia especifica de diseño de emprendimientos hoteleros. Para los alumnos de la carrera de Hotelería y Administración, este curso, les permitirá reconocer los fundamentos culinarios y le dará los alcances de la operación del área de producción de alimentos y bebidas de un establecimiento gastronómico.
