Evaluación de tres tipos de soportes para la inmovilización de lactasa (B-galactosidasa)

Abstract

Se investigó el empleo de tres tipos de polímeros naturales como soportes de la enzima B-galactosidasa de la levadura Kluyveromyces fragilis, para la preparación de leche deslactosada a baja temperatura (5 °C). La enzima se inmovilizó en perlas de alginato y de carragenina, y en discos de agar (12%). Se analizó el efecto de la concentración de enzima inmovilizada en agar sobre la hidrólisis de la lactosa (4,8 - 7,2 - 9,6 - 12%), y se realizó un estudio para determinar la estabilidad de la enzima durante su uso continuo, Se encontró que es posible obtener leche parcial o totalmente deslactosada, utilizando lactasa inmovilizada en los tres tipos de soportes y que los porcentajes de hidrólisis de lactosa, al utilizar agar como soporte, son significativamente mayores (p0,05) en el porcentaje de hidrólisis y sin aumento en la carga microbiana.
