Consumo de alimentos fortificados en adolescentes costarricenses: aporte a la ingesta de micronutrientes

Abstract

Objetivo: identificar el aporte de micronutrientes que proveen los alimentos de fortificación obligatoria en la dieta de un grupo de adolescentes costarricenses.Metodología: el estudio efectuado es de tipo cuantitativo, transversal y analítico. De un total de 180 participantes, se seleccionaron 133 adolescentes escolarizados, de la provincia de San José, residentes del área rural y urbana, con edades entre los 14 y los 17 años. Para la recolección de datos se empleó el registro de consumo de tres días.Resultados: al analizar el aporte de cada nutriente fortificado a la ingesta total, el alimento de fortificación obligatoria que aportó la mayor partede tiamina (22,2%), zinc (15,5%), niacina (17,3%), vitamina B12 (5%) y ácido fólico (23,4%) fue el arroz, mientras que el hierro (18,3%) y la riboflavina (9,1%) provinieron de alimentos preparados con harina de trigo; la mayor cantidad de vitaminaA (19,1%) la aportó el azúcar. A pesar de que el maíz es un alimento fortificado, su aporte a la ingesta de micronutrientes resultó escaso, pues no superó el 2,8%.Conclusión: la aplicación de las políticas de fortificación, a partir de 1997, ha contribuido a que las personas adolescentes hayan mejorado las ingestas de hierro, folatos y vitamina A, nutrientes que demostraron ser deficientes en la dieta de las personas costarricenses en épocas anteriores.
