La economía del cerdo ibérico

Abstract

En los últimos años el porcino ibérico está teniendo una importancia significativa, tanto en la economía como el conocimiento en el exterior de la Comunidad Autónoma extremeña, por un producto típico de la región: los jamones o perniles y las paletas de cerdo ibérico. El presente artículo hace mención tanto al producto original, el cerdo ibérico, como a su producción y comercialización, haciendo mención especial a ACERIBER por la defensa de la raza porcina ibérica, su conservación y mejora genética y a “Dehesa de Extremadura” órgano encargado de velar por el estricto cumplimiento de la calidad del pernil y la paleta extremeña, así como su comercialización y difusión de la Comunidad Autónoma.

In recent years the Iberian pig is having a significant importance, in the economy and in the knowledge outside the Autonomous Community of Extremadura, for a typical product of the region: the hams or palettes hams and Iberian pork. This article mentions both the original product, the Iberian pig, as their production and marketing, with particular mention of ACERIBER for the defense of the Iberian pig breed, and to "Dehesa de Extremadura" institution responsible for ensuring strict compliance of quality of Extremadura ham and palette, as well as its marketing and distribution of the region.
