Las industrias a nivel mundial han aumentado su preocupación por medir y controlar su huella de carbono y así mismo los consumidores cada vez ejercen más presión sobre las empresas para exigir productos amigables con el medio ambiente y procesos industriales responsables con el medio ambiente. Este artículo se enfoca en la medición de la huella de carbono y la huella hídrica de una industria panificadora con sede en Colombia con el objetivo de cuantificar y comparar su impacto con el de otras industrias del mismo sector. Industries worldwide have increased their concern to measure and control their carbon footprint and likewise the consumers increasingly exert more pressure on companies to demand friendly products and environmentally responsible industrial processes. This article focuses on the measurement of the carbon footprint and the water footprint of a bakery based in Colombia industry in order to quantify and compare its impact with that of other industries in the same sector.
