Comportamiento del consumidor ante la compra de colorante natural a base de epicarpio de chontaduro en la ciudad de Cali

Abstract

El propósito de esta investigación fue conocer el comportamiento del consumidor incluyendo factores como intención de compra y hábitos de consumo de colorantes alimenticios. Se pretendía buscar si existe o no la posibilidad de que el colorante natural a base de epicarpio de chontaduro fuera aceptado por los consumidores en la ciudad de Santiago de Cali. Para cumplir los objetivos se desarrolló una investigación mixta aplicando técnicas cualitativas y cuantitativas. Se seleccionó la metodología de focus group para conocer gustos y preferencias del consumidor y aceptación del colorante natural a base de epicarpio de chontaduro y como técnica cuantitativas se aplicó un cuestionario a 267 personas de la ciudad de Santiago de Cali. De esta manera se logró identificar hábitos de consumo e intención de compra para el colorante natural a base de epicarpio de chontaduro. Con los resultados obtenidos fue posible determinar los objetivos de la investigación y decidir si es una buena oportunidad para el colorante natural entrar al mercado de la ciudad Santiago de Cali.
