Abstract

En esta tesis se pone de manifiesto los efectos protectores cardiovasculares de los ácidos grasos omega-3. Los principales ácidos grasos omega-3 cardioprotectores son el ácido eicosapentanoico (EPA) y ácido Docosahexaenoico (DHA). Estos ácidos grasos el organismo humano no los puede sintetizar por lo que deben ser incorporados al organismo mediante la alimentación o mediante suplementos de aceite de pescado. El pescado es el único alimento natural que contiene EPA y DHA en proporciones adecuadas. Se desmitifica la creencia generalizada de que los pescados azules y en concreto la sardina, el atún, la caballa y el salmón son los únicos que contienen ácidos grasos omega-3, ya que en este caso la merluza analizada contiene más ácidos grasos omega-3 que otras especies denominadas azules. El porcentaje medio de ácidos grasos (2,9 ± 1,75) obtenido en las muestras de merluza analizadas nos indica que la clasificación clásica de los pescados en función de su contenido en grasa como azules, semigrasos y blancos no se ajusta a la realidad, y deberían diferenciarse por la cantidad y calidad de su grasa que varia en función de una curva estacional
