Aplicación de la biotecnología vegetal a la biofortificación de alimentos

Abstract

La biofortificación es una herramienta clave para solucionar el grave problema del déficit de micronutrientes en buena parte de la población mundial, el cual desemboca en varias enfermedades y muertes evitables. La biofortificación por métodos biotecnológicos consiste en la mejora del contenido de micronutrientes en los alimentos mediante transgénesis o edición génica. Estas técnicas han permitido mejorar la calidad nutritiva de cultivos como el arroz, la patata, la batata o la yuca, que suponen la principal fuente de alimentación en determinadas poblaciones humanas ubicadas principalmente en Asia y África. Los estudios se centran en elevar el contenido de vitaminas, hierro y zinc entre otros, pues sus carencias son las más relevantes y las que tienen un mayor índice de mortalidad. Entre las variedades desarrolladas destaca el arroz dorado, cuyo consumo ya ha sido aprobado en varios países. De este modo, el objetivo del presente trabajo es recopilar los principales experimentos realizados hasta la fecha y comprender la evolución y actualidad de la biotecnología aplicada a la biofortificación. Los próximos años serán claves a la hora de implementar estos avances en la sociedad y convencer a la opinión pública de su importancia.
