Abstract

El objetivo de este estudio fue apreciar posibles diferencias de calidad en leche obtenida de vacas, ovejas y cabras, abastecidas con agua de bebida de riego (AR) y agua depurada (AD). Para ello se tomaron animales de estudio control (AR) y problema (AD) y durante un año, se realizaron controles para observación de variables: físicoquímicas: humedad, grasa, densidad, aw, pH, cenizas, ácido láctico, proteínas y ESM. microbiológicas: aerobios mesófilos, enterobacterias, coliformes, hongos y levaduras, Salmonella spp., clostridios sulfitoreductores y Staphylococcus aureus.

The aim of this study was to assess possible differences in the milk quality from cows, sheep and goats, supplied with drinking water for irrigation (AR) and treated water (AD). This study took control (AR) and experimental animals (AD) and for one year, their milk was monitored to observe variables: Physicochemical: moisture, fat, density, aw, pH, ash, lactic acid, proteins and EN (fat free dry matter). Microbiological: aerobic plate, Enterobacteriaceae spp., coliforms, fungi and yeasts, Salmonella spp., clostridia and Staphylococcus aureus.
