Mejora de la calidad de la canal y carne de terneros mediante la inclusión de esparceta en la dieta

Abstract

La esparceta (Onobrychis viciifolia), leguminosa forrajera local con contenido medio de proantocianidinas, podría ser utilizada en las dietas de cebo de terneros. Este estudio evalúa el impacto de su inclusión como heno o incluido en el pienso el 15% pélet (pienso ESP) en la calidad de la canal y carne de terneros. Se alimentaron 40 terneros Montbéliarde con cuatro dietas durante 28 semanas: pienso+paja, pienso+heno, pienso ESP+paja y pienso ESP+heno. Se estudió la canal: peso, rendimiento, conformación y engrasamiento; y carne: composición química; color, metamioglobina y oxidación lipídica durante 11 días y esfuerzo durante 14 días.A pesar del diferente peso al sacrificio, las canales presentaron similar peso y engrasamiento, pero las de los terneros pienso+heno presentaron peor conformación que los de pienso ESP+paja. La dieta solo afectó al tono de la carne, siendo inferior en pienso+paja que en pienso ESP+heno; y a la oxidación lipídica siendo superior en los terneros pienso+heno. El tiempo de exposición al oxígeno y maduración de la carne afectaron a todos los parámetros pero sus valores fueron aceptables durante todo el tiempo. Por todo esto, se puede recomendar la inclusión de la esparceta tanto en heno como pélet en las dietas de cebo de terneros.
