Valorización de efluentes industriales de destilerías

Abstract

Las vinazas son el residuo de la destilación de aquellos pro ductos y subproductos de la industria agroalimentaria cuyo contenido en azúcares permite una fermentación alcohólica de los mismos, con el objetivo de obtener alcohol etílico de procedencia natural. Las características de las vinazas son dependientes de la materia prima (el vino o los subpro ductos de las industrias agroalimentarias) y del proceso de elaboración utilizado; así cabe distinguir, por ejemplo, entre las vinazas procedentes de industrias vitivinícolas (vinazas de vino, vinazas de lías y vinazas de piquetas) y las proce dentes de azucareras (vinazas de melazas).
