Abstract

RESUMEN: La necesidad de monitorear en corto tiempo los pesticidas organofosforados en los alimentos, ha llevado a la investigación sobre el desarrollo de herramientas analíticas capaces de cuantificarlos de manera simple, in situ y en lo posible a bajo costo. De este modo, los alimentos que contengan residuos de plaguicidas a una concentración no permitida por la normatividad se descartarían rápidamente. En la industria alimentaria y especialmente en la producción de leche por su masivo consumo y recambio constante se requiere que la decisión de calidad de la materia prima sea tomada lo más pronto posible. Los biosensores enzimáticos basados en Colinesterasa han sido desarrollados para el análisis de plaguicidas organofosforados en aguas, y con otras matrices están haciéndose varias investigaciones. Para el mejoramiento de la sensibilidad en la cuantificación de los plaguicidas mediantes los biosensores, se han estado estudiando técnicas de inmovilización enzimática, materiales y tipos de electrodos de trabajo.

ABSTRACT: The need for monitoring organophosphate pesticides in food in a short time has led to research on the development of analytical tools capable of quantifying them simply, in situ, and at low cost. In this way, food with pesticide residues to concentration levels not allowed by normativity would be quickly discarded. In the food industry and especially in the production of milk for its mass consumption and constant turnover, it is required that the quality decision of the raw material is taken as soon as possible. The enzymatic biosensors based in cholinesterase have been developed for the analysis of organophosphorus pesticides in water, and there are reports that indicate their use in other arrays. To improve the sensitivity for quantification of pesticides using biosensors, enzyme immobilization techniques, materials and types of working electrodes have been studied
