Abstract

RESUMEN: El comportamiento de sorción de los materiales alimenticios es información fundamental para el diseño de procesos de secado y almacenamiento que garanticen la estabilidad de los alimentos. En este estudio se ajustaron las isotermas de sorción de avena en grano (Avena sativa) a dos temperaturas (25 y 37 ºC) mediante seis modelos matemáticos (GAB, BET, Oswin, Caurie, Smith y Henderson). Se utilizó la técnica gravimétrica en el rango de actividad acuosa (aw) entre 0,107 y 0,855. La calidad del ajuste se evaluó con el coeficiente de regresión (r2) y el porcentaje de error medio relativo (% E). La humedad de equilibrio y humedad de seguridad (XS), presentaron dependencia con la temperatura. El calor isostérico (QS) alcanzó un valor de 35,833 kJ/mol para una humedad de 0,07 g agua/g m.s. Los modelos que mejor se ajustaron a los datos experimentales fueron Oswin, Smith y Caurie.

ABSTRACT The sorption behavior of food materials is critical information for the design of drying and storage processes to ensure the stability of food. In this study the sorption isotherms of oat whole grain (Avena sativa) were adjusted at two temperatures (25 and 37 ° C) using six mathematical models (GAB, BET, Oswin, Caurie, Smith, and Henderson). Gravimetric method was used in the range of aqueous activity (aw) between 0.107 and 0.855. The quality of the fit was assessed with the regression coefficient (r2) and the mean relative error percentage (% E). The equilibrium moisture and the safety humidity (XS) presented dependence with temperature. Isosteric heat reached a value of 35.833 kJ/mol for humidity at 0.07 g water/g m.s. The models that best fit the experimental data were Oswin, Smith and Caurie.
