Uso de metodologías activas en el aprendizaje de higiene alimentaria

Abstract

Este proyecto implementó metodologías activas en la asignatura de "Higiene Alimentaria" del Grado en Nutrición Humana y Dietética, respondiendo a un diagnóstico de baja motivación y dificultades en la aplicación práctica de conocimientos. Las estrategias incluyeron seminarios preparatorios, prácticas de laboratorio mejoradas y un e-portfolio para evaluación y reflexión. Los estudiantes documentaron y analizaron sus prácticas en el eporfolio, recibiendo retroalimentación continua en varias fases. Los resultados mostraron un aumento significativo en la motivación de los estudiantes y una mejora en la capacidad de aplicar conocimientos teóricos en contextos prácticos. Las encuestas de satisfacción y el Focus Group reflejaron percepciones positivas sobre las nuevas metodologías y herramientas, indicando un incremento en el desarrollo de habilidades de pensamiento crítico y creativo. Además, se observó una mejora significativa en las calificaciones de los estudiantes, especialmente en los exámenes y la calificación final promedio. Este proyecto demuestra que la adopción de metodologías activas y herramientas tecnológicas puede fomentar un aprendizaje más efectivo y motivador en la educación superior

This project implemented active learning methodologies in the "Food Hygiene" course within the BSc in Human Nutrition and Dietetics, responding to a diagnosis of low motivation and difficulties in the practical application of theoretical knowledge. The strategies included preparatory seminars, improved laboratory practices, and an e-portfolio for evaluation and reflection. Students documented and analyzed their practices in the e-portfolio, receiving continuous feedback at various stages. The results showed a significant increase in student motivation and an improved ability to apply theoretical knowledge in practical contexts. Satisfaction surveys and Focus Group discussions reflected positive perceptions of the new methodologies and tools, indicating an increase in the development of critical and creative thinking skills. Additionally, there was a significant improvement in student grades, particularly in exams and overall final grades. This project demonstrates that adopting active learning methodologies and technological tools can foster more effective and motivating learning in higher education
