Abstract

Se pretende demostrar la existencia de una relación entre la CAT medida en la dieta (CAT-D) y la CANE medida en el plasma (CANE-P) y apoyar si una CAT de la dieta constituye un indicador válido de exposición a una ingesta global de antioxidantes. También, si una alta capacidad antioxidante, medida tanto en dieta como en plasma, se asocia con una dieta rica en antioxidantes provenientes de alimentos, considerando también biomarcadores de nutrientes antioxidantes, hábitos de vida saludables y bajas concentraciones plasmáticas de biomarcadores de estrés oxidativo y de inflamación. Conclusión: Existe una correlación débil/moderada pero estadísticamente significativa entre la CAT-D y la CANE-P en el ensayo FRAP, con o sin ácido úrico. Esta correlación se confirma en las dos poblaciones estudiadas. El ensayo FRAP es el más adecuado para estimar la CAT-D y CANE-P. La CANE-P en términos de FRAP se asocia positiva y significativamente con la mayoría de los biomarcadores de nutrientes antioxidantes, pero no se asocia con los marcadores de inflamación. Por lo tanto, la medida de FRAP en plasma refleja el potencial antioxidante del organismo pero no el estado anti-inflamatorio en individuos sanos.
