Hidrólisis enzimática de harina de trigo

Abstract

El objetivo de esta investigación es la obtención de hidrolizados enzimáticas de harina de trigo de interés alimentario. así mismo se ha estudiado la cinética de esta hidrólisis. el sustrato utilizado ha sido harina de trigo tostada durante una hora a 150 c y las enzimas alfa-amilasa y pululanasa. en prácticamente la totalidad de los experimentos se ha mantenido constante el ph=5 y la temperatura, 50 c, la conversión del sustrato se ha correlacionado con todas las variables de operación concentraciones de enzima y sustrato, tiempo y temperatura) y la cinética de la hidrólisis se ha ajustado. a un modelo teórico de dos reacciones en serie en que la enzima se une simultáneamente a dos centros activos del sustrato. la mejor distribución de pesos moleculares se ha obtenido licuando el almidón con alfa-amilasa y gelatinizándolo a continuación, lo cual potencia la acción de la pululanasa
