Estudio cinético de la isomerización glucosa-fructosa

Abstract

Se ha estudiado la isomerización glucosa-fructosa en un reactor homogéneo perfectamente agitado con y sin la presencia de la enzima glucosa isomerasa sweetzyme a inmovilizada suministrada por novo.se estudio el equilibrio resultando que la constante es función de la temperatura con una variación de entalpia de 8,5 kj/mol en el sentido g - f.la reaccion no enzimática transcurre en ambos sentidos con orden unidad y las energías de activación son de 110 y 118 kj/mol en los sentidos g - f y f - g.la reacción enzimática transcurre mediante un proceso reversible de pseudoprimer orden siendo favorable el acondicionamiento con ion cobalto pues aumenta la velocidad de reacción y se mantiene constante la actividad enzimática ha comprobado que para partículas de tamaño superior a 0,297 mm el factor de efectividad es menor que la unidad
