La importancia de la sal en el reino de Granada primordialmente viene dada, no tanto, por su uso como condimento alimenticio, sino por su utilización en la industria de salazón de pescado, que se llevaba a cabo a lo largo de toda la costa granadina, sobre todo desde Vélez Málaga a Marbella, las anchovas malagueñas eran famosas en todo el Mediterráneo. Además había hombres que salaban el pescado fresco, en la misma playa, que luego era vendido “por menudo” en las zonas del interior.
