Cambio climático y micotoxinas ¿Sabemos lo suficiente?

Abstract

Las micotoxinas son peligros químicos con un origen biológico, al ser producidos por mohos. Además, son sustancias que tienen un efecto negativo en la salud de hombres y animales. Su bioformación suele producirse mayoritariamente en el campo porque es muy difícil controlar la contaminación fúngica de los cultivos en esas condiciones. Este origen va a condicionar que la presencia de estas toxinas esté influida por los fenómenos naturales del cambio climático. Los métodos de estudio de este efecto están basados en modelos predictivos que utilizan datos históricos de información climatológica, contaminación por micotoxinas de estos cultivos y características ecofisiológicas de las cepas fúngicas productoras. En un futuro se cree que la contaminación por aflatoxinas en cultivos como el maíz será un problema emergente a controlar en la Unión Europea.
