Abstract

El hígado es un coproducto de gran interés debido a su riqueza nutricional, por este motivo se ha elaborado un ingrediente proteico rico en zinc-protoporfirina (ZnPP). El objetivo principal es la determinación de las propiedades tecno-funcionales (color, propiedad espumante, emulsionante, tioles libres de la proteína y solubilidad de la proteína) en diferentes rangos de pH y porcentaje de sal, previamente estudiados, mediante un diseño experimental de superficie respuesta con el programa JMP. Además, de un análisis sensorial olfativo con levaduras y cultivos bioprotectores para enmascarar el olor a hígado fresco característico del ingrediente proteico. El color es uno de los parámetros más importantes, ya que el objetivo del ingrediente es la proporción de color rojizo a los productos. Está influenciado principalmente por el efecto del pH, excepto en el parámetro a * que también está el efecto de la sal. Respecto a la propiedad emulsionante, se concluye que el ingrediente no presenta. En cambio, si propiedad espumante con una buena estabilidad. La conformación proteica se deduce por los tioles libres en la proteína. A mayor pH, mayores grupos libres, por tanto, conformación más desplegada. La solubilidad de la proteína es mayor en un porcentaje de sal y pH neutro. Las levaduras y cultivos bioprotectores enmascaran el olor a hígado fresco.

El fetge és un coproducte de gran interès a causa de la seva riquesa nutricional, per aquest motiu s'ha elaborat un ingredient proteic ric en zinc-protoporfirina (ZnPP). L'objectiu principal és la determinació de les propietats tecno-funcionals (color, propietat escumant, emulsionant, tiols lliures de la proteïna i solubilitat de la proteïna) en diferents rangs de pH i percentatge de sal, prèviament estudiats, mitjançant un disseny experimental de superfície resposta amb el programa JMP. A més, d'una anàlisi sensorial olfactiu amb llevats i cultius bioprotectors per emmascarar l'olor de fetge fresc característic de l'ingredient proteic. El color és un dels paràmetres més importants, ja que l'objectiu de l'ingredient és la proporció de color vermellós als productes. Està influenciat principalment per l'efecte del pH, excepte en el paràmetre a * que també hi ha l'efecte de la sal. Respecte a la propietat emulsionant, es conclou que l'ingredient no en presenta. En canvi, si propietat escumant amb una bona estabilitat. La conformació proteica es dedueix pels tiols lliures en la proteïna. A major pH, majors grups lliures, per tant, conformació més desplegada. La solubilitat de la proteïna és major en un percentatge de sal i pH neutre. Els llevats i cultius bioprotectors emmascaren l'olor de fetge fresc.

The liver is a co-product of great interest due to its nutritional richness, which is why a protein ingredient rich in zinc-protoporphyrin (ZnPP) has been made. The main objective is to determine the techno-functional properties (colour, foaming property, emulsifier, free thiols of the protein and solubility of the protein) in different ranges of pH and percentage of salt, previously studied, by means of an experimental design of surface response with the JMP program. In addition, an olfactory sensory analysis with yeasts and bioprotective cultures to mask the smell of fresh liver characteristic of the protein ingredient. Colour is one of the most important parameters as the goal of the ingredient is the proportion of reddish colour to the products. It is mainly influenced by the effect of pH, except for the parameter a * which also has the effect of salt. Regarding the emulsifying property, it is concluded that the ingredient does not have any. In contrast, if foaming property with good stability. Protein conformation is deduced by free thiols in the protein. At higher pH, larger free groups, therefore, more deployed conformation. The solubility of the protein is higher in a percentage of salt and neutral pH. Yeasts and bioprotective crops mask the smell of fresh liver.
