Abstract

En el presente estudio se evaluó el uso de recubrimientos comestibles a base de alginato sódico al 2% que incluían nanopartículas lipídicas de aceite de maíz enriquecido con β-caroteno y α-tocoferol al 0,5%, en pera Conference fresca cortada, jamón de pavo y queso bajo en grasa. El estudio pretendía caracterizar fisicoquímicamente las nanoemulsiones para su posterior aplicabilidad como recubrimiento comestible y sistema eficiente de suministro de sustancias activas liposolubles. Los resultados obtenidos en la caracterización de la nanoemulsión y durante el proceso digestivo “in vitro” fueron analizados estadísticamente, aplicándose un análisis de varianza a un nivel de significación del 5%. El proceso de microfluidización proporcionó una nanoemulsión con unas características de tamaño de partícula, homogeneidad, carga eléctrica y viscosidad adecuadas para la encapsulación de β-caroteno y α-tocoferol y para su aplicación alimentaria. La digestibilidad de la nanoemulsión fue parecida en todas las matrices, aunque la bioaccesibilidad de β-caroteno y α-tocoferol en pera fresca cortada fue superior. La falta de concordancia con la literatura citada, sugiere que deberían implantarse cambios en el entorno digestivo y en el tipo de aceite usado en la formulación del recubrimiento comestible. Aún así, se obtuvo información valiosa sobre la aplicabilidad de nanoemulsiones capaces de subministrar lípidos activos.
